Hefeweizen had a rocky start. Originating in Bavaria during the 1520s, brewing Hefeweizen was a transgression from traditional German brewing methods due to its use of wheat malt. At the time, regulations for brewing - known as the Purity Laws - restricted brewers to making beer using only barley, hops, and water. Wheat malt, a main ingredient of Hefeweizen, was not permitted. Fortunately, taste always prevails! Thanks to Hefeweizen's extreme popularity among the royals of that time, the beer survived and is now one of the most popular beers throughout the world.
The ZooBrew Hefeweizen represents the heart of who we are: meticulous yet non-conformist. Just as we could have taken the advice of our parents and grown comfortable in a nice corporate job, German brewers could have stayed in their lane and continued to brew traditional German beer. But when you have a passion, it's all-consuming. Just like the brewers of Hefeweizen, we decided to break the mold of tradition!
